
1. Chill a coupe glass. 2. Muddle the cucumber slices in a shaker, add the mint leaves, and press them very lightly. 3. Add the gin, lime juice, sugar syrup, and ice, then shake well. 4. Double strain into the chilled glass and top with soda water.
The Eastside Gimlet is a fresh modern Gimlet variation with cucumber and mint. George Delgado created the drink in 2004 at New York's Libation; a straight-up version later became widely associated with Milk & Honey.
