Mint leaves bring a cooling green aroma that releases with only gentle pressure. Fresh, firm leaves without dark spots or wilted edges matter a lot in cocktails. Fresh plant ingredients are especially noticeable in the aroma above the glass. Cutting, gentle muddling, or peel oils can add brightness, but rough handling quickly pulls out bitterness, wateriness, or grassy flavors. Do not crush mint aggressively: rough muddling pulls grassy bitterness from stems and veins. For Mojitos and juleps, gentle aroma release is usually enough.
