
Cucumber gives a cocktail a cool green aroma, watery freshness, and an almost spa-like feel. It works especially well with gin, lime, mint, elderflower, and soft herbal flavors. Fresh plant ingredients are especially noticeable in the aroma above the glass. Cutting, gentle muddling, or peel oils can add brightness, but rough handling quickly pulls out bitterness, wateriness, or grassy flavors. Cut cucumber just before use: the cut surface loses its fresh aroma quickly and starts to smell watery. For clear drinks, thin slices or gentle muddling work best.
