
A cocktail strainer is a bar sieve used to hold back ice, fruit, herbs, and large particles while pouring a cocktail from a shaker or mixing glass into a serving glass. Most often the term refers to a Hawthorne strainer: a metal plate with a spring around the edge. The spring catches ice and pulp, while the tabs help the tool sit on the rim of the vessel. A Hawthorne strainer is convenient after shaking in a Boston or French shaker. A julep strainer is more often used with a mixing glass for clear stirred cocktails. A fine strainer is added as a second sieve when you need to remove tiny ice shards, herbs, spices, or pulp.
