The Vieux Carré was created by Walter Bergeron at the Hotel Monteleone in New Orleans in the 1930s. The name means “old square” and refers to the French Quarter. The cocktail is rich, spicy, and layered: rye whiskey, cognac, vermouth, herbal liqueur, and bitters create a dense drink made for slow sipping.
