1. Muddle fresh ginger in a shaker. 2. Add ice, blended Scotch, lemon juice, and honey-ginger syrup. 3. Shake well and strain into a glass over fresh ice. 4. Carefully float smoky single malt Scotch on top. 5. Garnish with candied ginger.

Description:

The Penicillin was created by Sam Ross at New York's Milk and Honey in 2005. It became one of the most influential modern Scotch cocktails. At heart, it is a whiskey sour with honey, ginger, and a smoky aromatic float. Ginger gives heat, honey adds softness, and peated Scotch makes the aroma memorable.
