Fresh ginger brings sharp warmth, citrusy spice, and a slight dryness. It works well muddled, in syrups, in cordials, and with rum, whiskey, or citrus. Fresh plant ingredients are especially noticeable in the aroma above the glass. Cutting, gentle muddling, or peel oils can add brightness, but rough handling quickly pulls out bitterness, wateriness, or grassy flavors. Prepare fresh components as close to mixing as possible. Cut herbs, lime, cucumber, and ginger lose aroma quickly while bitterness and wateriness become more noticeable.
