The Mai Tai is one of the great tiki cocktails, usually associated with Victor Bergeron and Trader Vics in California in the 1940s. The name is often explained through a Tahitian phrase meaning “good” or “the best.” In a good Mai Tai, rum should stay at the center. Orgeat and curaçao add nutty and citrus depth, but should not turn the drink into a sweet fruit punch.
