
An ice crusher breaks cubes into small chips or crushed ice. It is used for juleps, tiki cocktails, cobblers, frozen drinks, and presentations with a high mound of ice. It may be manual or electric: manual models are compact and suitable for a home bar, while electric ones are faster during busy service. Compared with a Lewis bag and mallet, an ice crusher gives a more even texture and depends less on technique. Crushed ice melts faster than cubes, so drinks made with it should be served immediately and the glass should be filled generously.
