
White rum is a clear distilled spirit made from sugar-cane products, most often molasses and sometimes fresh cane juice. It is usually young and light-bodied, and may be filtered after short aging to keep the color clear. In rum cocktails, strength is only part of the story: raw material, aging, and regional style matter too. White rum keeps a drink clean and fresh, while dark or aged rum adds molasses, oak, spice, and a deeper finish. A Daiquiri is a useful way to understand rum: acid and sugar quickly reveal whether the base is dry, fruity, grassy, or molasses-heavy. It is one of the clearest tests for a bottle.
