Description:

The Bennett is an early 20th-century gin sour, close in spirit to a Gimlet but drier and spicier in character. According to Difford's Guide, the recipe first appeared in Robert Vermeire's 1922 book Cocktails: How to Mix Them and was later repeated in Cocktails by Jimmy in 1930. This is a small cocktail where a few dashes of bitters do a surprising amount of work. They do not make the drink heavy or overtly spicy on their own, but they pull the flavor together: the gin feels deeper, the lime reads drier, and the sweet-sour balance becomes more precise.
