
Angostura is a concentrated aromatic bitters with spice, cinnamon, clove, and herbal notes. A few dashes connect sweetness, acidity, and spirit base while adding depth. Bitters work like seasoning: they rarely need to be the main flavor, but without them a cocktail can feel flat. Add gradually, because excess bitterness cannot really be removed. Add bitters near the end of building a recipe and keep track of the dash count. Different dasher tops can give different intensity even when the written recipe looks identical.
