The Clover Club is named after the Philadelphia gentlemen's club and was popular before Prohibition in the United States. Today it is considered a classic example of a gin cocktail with berry sweetness and an egg-white foam. In flavor, it is not a dessert-like raspberry drink but a dry, fresh sour with a soft texture. Egg white makes it silky, while raspberry adds color and fruit without erasing the gin base.
