Description:

The Aviation is a pre-Prohibition gin classic usually linked to Hugo Ensslin's 1916 Recipes for Mixed Drinks. The name refers to the pale blue tone created by crème de violette. For many years the cocktail often appeared without crème de violette because the ingredient was hard to find. Its modern return is closely tied to renewed interest in historical cocktail recipes. In flavor, it is a dry floral-citrus cocktail: maraschino adds stone-fruit sweetness, lemon keeps it fresh, and the violet liqueur should be subtle rather than perfumed.
