Horse's Neck

Horse's Neck

Ingredients:

Method:

1. Prepare a long lemon peel spiral and place it in a highball glass. 2. Fill the glass with ice. 3. Pour in the brandy and bitters. 4. Top with ginger ale. 5. Stir gently.

Description:

The Horses Neck is named for the long lemon peel spiral that hangs inside the glass and resembles a horses neck. It is one of those cocktails where the garnish is part of the drink's identity. In character, it is a refreshing brandy highball with ginger spice. It is simpler than many classics, but presentation matters: without the long peel, much of the drink's image is lost.
