1. Chill a Collins glass. 2. Pour the fresh lime juice and sugar syrup into the glass. 3. Fill the glass about halfway with crushed ice. 4. Add the mint leaves and gently churn with a bar spoon so the mint releases aroma without being shredded. 5. Add more crushed ice almost to the top. 6. Top with ginger beer and briefly churn again. 7. Garnish with a fresh mint bouquet.
