Mezcal is a Mexican agave spirit. It is often remembered for smoke, but good mezcal can also be mineral, fruity, herbal, and very dry. Agave spirits bring a green, peppery, mineral, or smoky line that too much sweetness can easily hide. With citrus and salt, they show their dry vegetal character especially well. With agave spirits, salt and acidity matter a lot: they can reveal minerality and green pepper, but too much makes the drink harsh. Start from a clean, dry balance.
