Coconut Milk

Coconut milk brings fat, tropical aroma, and a soft sweet-leaning texture. In tiki and creamy drinks it adds body, but it needs proper shaking to integrate. Dairy and coconut ingredients change a drink's weight more than its aroma: they make it softer, denser, and more dessert-like. They need to integrate well with alcohol and acid, otherwise the texture separates into layers. Stir coconut milk well before use: the fatty part often separates from the liquid.
