Anejo Tequila is a Mexican agave spirit made from blue agave. Young styles are usually brighter and more vegetal, while aged styles become softer, drier, and more oak-driven. Agave spirits bring a green, peppery, mineral, or smoky line that too much sweetness can easily hide. With citrus and salt, they show their dry vegetal character especially well. With agave spirits, salt and acidity matter a lot: they can reveal minerality and green pepper, but too much makes the drink harsh. Start from a clean, dry balance.
