
Aged Rum is a distilled spirit made from sugar cane, usually molasses or cane juice. Depending on style, it can be light and dry, caramel-like, spicy, aged, or very full-bodied. In rum cocktails, strength is only part of the story: raw material, aging, and regional style matter too. White rum keeps a drink clean and fresh, while dark or aged rum adds molasses, oak, spice, and a deeper finish. A Daiquiri is a useful way to understand rum: acid and sugar quickly reveal whether the base is dry, fruity, grassy, or molasses-heavy. It is one of the clearest tests for a bottle.
