Cachaça is a Brazilian spirit made from fresh sugar-cane juice. Unlike most molasses-based rums, it often tastes more grassy, earthy, and vivid. A spirit like this is usually chosen for a clear accent: herbal, smoky, anise-led, grape-based, or sugar-cane driven. It can be the base of a drink, but even a small dose can reshape the first aroma and the finish. If the ingredient is highly aromatic, test it first in a small dose or as a glass rinse. Some bottles work better as a finishing stroke than as the main base.
